Bird cherry flour is a product almost unknown to the Ukrainian buyer, while European customers are looking for it throughout Ukraine. But such flour is produced by the only producer in the whole country from Pervomaisk, Mykolayiv region.
The production of small batches of bird cherry flour was mastered at Golta Farm from Pervomaisk. Today, in addition to this company, no one else in Ukraine is engaged in its manufacture.
According to the head of the company Sergey Belinsky, bird cherry flour is used for baking confectionery products, namely cookies and cakes. Thanks to this unusual ingredient, they have a specific aftertaste resembling rum. From this flour make a filling for sweets.
In Russia, this unusual flour has found wide application, because in this country there are a lot of wild bird cherry, while in Ukraine this tree is almost never found in the wild. Flour is especially popular in Siberia. Russian bakers add bird cherry flour not only to sweet pastries, but also to bread.In Ukraine, a new product is slowly finding its fans. There are many domestic customers, including cafes and restaurants that constantly buy flour.
Sergey Belinsky’s company also receives orders from Europe, but the enterprise does not yet have enough production capacities to work for export. In addition, bird cherry is grown on an industrial scale in Ukraine in the territory of forestries that planted it even under the USSR. To achieve large volumes of production, it is necessary to grow their own plantings.Then it will be possible to export the product to Europe, believes Sergey Belinsky. During the season, the company produces 1-2 tons of flour at a retail price of 150 UAH / kg. In Russia, such flour is more expensive. In terms of hryvnia, it turns out about 200 UAH / kg. Basically, the company sells flour from bird cherry through the Internet.
